HENNESSY X.O Cognac

In 1870, more than a century after it was founded, the house of Hennessy released the first X.O cognac, a delicate and masterful spirit that earned as much critical success as an export as it did on the Continent. Now over 130 years later, Hennessy X.O Cognac remains one of the world’s most acclaimed and prestigious spirits.

This magnificent cognac is an assemblage comprised of more than 100 eaux-de-vie principally from Grande and Petite Champagne regions, with lesser percentages obtained from the other primary appellations. The constituent elements are aged up to fifty years in seasoned Limousin oak barrels and receive further aging after blending to allow the cognacs in the assemblage to fully integrate.

The Hennessy X.O is a full and supremely elegant cognac. It has a deep mahogany hue and a creamy, velvety textured body. The bouquet is lively and grows with each passing minute, offering aromas of ripe plums, figs, chocolate and a bevy of spices. The cognac washes over the palate with the robust flavors of cinnamon, vanilla, pears and black pepper. The finish is first class—long and flavorful.

NOILLY PRAT ORYGINAL DRY Vermouth

Noilly Prat known as 'the Rolls Royce of vermouths', is recognised by barmen all over the world as a premium cocktail ingredient. The characteristic taste of Noilly Prat is attributable to the blend of white wines, fruit essences, herbs and spices. When combined with oak ageing, the result is a truly excellent dry vermouth.

In 1813, Joseph Noilly created the first recipe for dry French vermouth. To this day, the process has remained unchanged. Still produced in the South of France, the white wines are matured for eight months in large oak casks. Then, in a unique open air process, they are transferred to smaller oak barrels, where for 12 months they are subjected to the elements and take on a deep amber colour.

The white wines are then brought back indoors for blending. The fruit essences, including raspberry and lemon, are incorporated, before twenty different herbs and spices are added. These botanicals gradually impart their flavour to the wine to create the delicate flavour of Noilly Prat Dry.

9 LIVES Gin

'9 Lives' is an Old Tom gin, which is a style of gin that was particularly popular in the 18th Century and the Gin of Choice in the 19th Century. Today, it is making a bit of a comeback as it can be used to recreate classic gin cocktails more authentically. The name 'Old Tom' comes from what was perhaps the first example of a drinking fountain - a painted sign of a cat in the window of a pub, which declared the message that gin could be purchased 'by the cat'. Gin could be received via a lead pipe under the cat's paw. The name '9 Lives' harks back to this intriguing aspect of the history of gin. The gin is bottled and distilled in London, so I have used Clarendon, which is English, for the main typeface on the label and for the logo."

CAMARENA REPOSADO Tequila

Familia Camarena Tequila Reposado is 100% Blue Agave sourced from the Los Altos Highlands region of Jalisco, and distilled at Casa Camarena. This Reposado is aged for 2 months in both new and used American oak.

Fine Tequila doesn't happen by chance. For the Camarena Family, Tequila is a legend more than a century in the making.

In 1860, the Camarenas began cultivating fine altos Blue Agave for Tequila, soon becoming one of Mexico's top producers. Today, the family grows more than 3 million Agave plants, some at an altitude of 7,700 feet in the world's highest Agave fields. The fortuitous combination of elevation, a temperate growing cycle and indigenous red earth in Jalisco's highland region translates to delicate flavor and character in each bottle of Familia Camarena Tequila.

By 1938, Don Agustin Camarena founded the family's first Tequila distillery, Casa Tequilera Casco Viejo (soon to be renamed Casa Camarena), in the town of Arandas. Decades later, Don Agustin's daughter-in-law, Doña Elena Herrera Orendain - the great, great granddaughter of the legendary Don Jose Cuervo - became Managing Director of Casa Tequilera Casco Viejo in 1970. Today, Doña Elena is the Camarena Family matriarch and Casa Tequilera Casco Viejo is among the world's top four Tequila distilleries by volume.

LUCID Absinthe

Lucid is formulated by world renowned absinthe expert T.A. Breaux, and is distilled in strict accordance to traditional French methods. lucid is crafted in the historic Combier distillery, founded in 1834 and designed by Gustave Eiffel in the fabled Loire Valley of France. Each bottle of lucid is carefully prepared by skilled craftsmen, using ancient copper absinthe alembics. Unlike most contemporary imitators, lucid is distilled entirely from spirits and European herbs, and uses no artificial additives, oils, or dyes. lucid recalls the rich tradition of Absinthe, and is crafted using a full measure of Grande Wormwood (Artemisia absinthium), Green Anise, Sweet Fennel, and other fine European herbs traditionally used in making fine Belle Époque absinthe.

In accordance with the views of absinthe experts in Europe and the U.S., a genuine absinthe is always distilled directly from a mixture of whole herbs in alcohol, which should be a neutral spirit of agricultural origin. It should never be cold mixed from industrial extracts or steam distilled essences or oils. To be true to tradition, the herbs must include Grande Wormwood (Artemesia absinthium), as well as European green anise and sweet fennel, and can include other culinary herbs. An authentic absinthe vert receives its traditional green color directly from the whole herbs, and should never be colored with artificial colorants or chemicals (e.g., FD&C dyes). Genuine absinthe should never contain sugar as bottled, so it should not be classified as a Liqueur. Finally, a quality, genuine French absinthe will always contain a higher concentration of alcohol to preserve its herbal content and natural green color, 60-72% being typical.

Lucid contains a full measure of Grande Wormwood (Artemisia absinthium). By contrast, many other products with a claimed relationship to absinthe only contain Southernwood (Artemisia abrotanum – sometimes referred to as Southern Wormwood). Southernwood bears little resemblance to Grande Wormwood and has a completely different flavor and chemistry. Genuine absinthe, such as the absinthe made during the Belle Époque period in France, has always been made with Grande Wormwood as a key ingredient. In fact, the word “absinthe” itself is derived from the scientific name for Grande Wormwood – Artemisia absinthium.

ABSENTE Absinthe

There was once no spirit more notorious than Absinthe. The so-called "Green Muse" was at the height of fashion with the café society of Paris during the early 20th century. Famous artists, writers and poets such as Hemingway, Picasso, Degas, Toulouse-Lautrec and Oscar Wilde all indulged in Absinthe until its production was banned in 1915. With the introduction of Absente, Absinthe Refined, a new era of enlightenment beckons.

The liqueur is distilled in France by Destilleries et Domaines de Provence from a maceration of botanicals. Absente derives its brilliant color and seductive flavor from a botanical mix that includes star anise, angelica, peppermint and wormwood; not the grande variety causing the initial ban, but with a less bitter and decidedly safer Southern wormwood, known as "petite Absinthe." The liqueur is bottled at 110-proof.

Absente, Absinthe Refined is breathtaking. It has a captivating green color and broad bouquet of spicy herbal treats. The dazzling array of aromas is worth the trip alone. The liqueur's initial entry is strong, sizzling and predominantly spicy. The dry anise and mint flavors gradually begin to move forward, remaining on the palate long after the more delicate nuances have faded. Absente is complex and elegant, a classic in the making.

fenom Modern Absinthe

"fenom (from phenomenon) is the first modern absinthe delicately refined to surpass twenty-first century taste-makers’ desires. Smooth and lightly aromatic, fenom is authentically hand crafted from traditional herbs including grand wormwood by one of France’s few remaining absinthe experts.

Note from producer;
fenom strays from the perceptions of traditional absinthes and presents a fresh, smooth that is lightly aromatic with subtle herbal undertones, a dramatic departure from the liquors’ typically overwhelming bold flavor. Its lower alcohol content (80 proof/40 percent) and clear consistency lends to an increased level of drinkability, helping to cement its position as a liquor of choice for bottle service, chilled shots and mixed drinks.

With only 63 calories per ounce, the formula is intended to be enjoyed without the addition of water and sugar, although it can be combined with mixers that are typically blended with other liquors like vodka and tequila.

fenom is handcrafted and distilled at a family-owned facility located in Fougerolles, France, that has produced authentic absinthes for more than 100 years. All natural ingredients, including wormwood, fennel, anise, gentian and mugwort are blended together with natural spring water from the Vosges Mountains using a traditional method of manufactur

Seven years later, Belvedere`s high character and uncompromising integrity are recognized internationally. Consumer demand continues to increase at an accelerated pace, and worldwide recognition of the brand is at an all-time high. WAQAR Pisco

Pisco WAQAR is the result of a careful process in which innovation and tradition are combined. The wine, especially elaborated for this pisco, derives from hand-picked harvesting of Muscat grapes that grow in century-old vineyards. Combined with the terroir from Tulahuén, an ancient town at the foothill of the Andes Mountains in the northern region of Chile, these grapes have given fame and recognition to Chilean wines and pisco.
The quality of Pisco WAQAR lies in a family distillation culture which has been handed down from father to son, for over five generations.

We have used state-of-the-art technology and small-batch processing to allow more control over the final product. In this way, what you have in your hands is a unique hand-made pisco, natural and aromatic, with no chemical components.

Small batches of pisco WAQAR are distilled in Tulahuén under the supervision of the distillation master, who, guided by his experience and sense of pisco flow, controls the fire that gently embraces the big copper cauldron on its clay oven. This allows for the gradual evaporation of the wine. Height above sea level facilitates the evaporation of wine components using milder temperatures, while the cold water from the cordillera maintain the gradual depuration of positive wine aromas, collecting only alcohol´s 47%, only the heart of the wine.

BALBLAIR 1989 SPECIAL EDITION Single Malt

“Many single malt Scotch whiskies distinguish between their expressions with an age statement, rightly proud of the long maturation their distillates have undergone. At Balblair we have pursued a Vintage statement by which to differentiate our various expressions. In doing so, we take a complementary approach between age itself and the fundamental character of the spirit that is Balblair Highland Single Malt Scotch Whisky.
The ageing process plays a significant role in the maturation of fine single malt Scotch whiskies. The interaction of the spirit with the oak barrels and the environment in which they are matured is fundamental to the character of the final distillate. However, over and above this, is the character of the spirit itself.Every distillery is different. Its location. Its water source. Its still shape. Its wood policy. In fact, there are a myriad of variables. With Balblair we go one step further. Our Vintage whiskies are hand-picked, specially selected ‘years’ that represent the very best whisky the distillery has to offer.
Every year our Distillery Manager, John MacDonald selects only those whiskies that have reached their exact point of ‘optimum maturation’, the absolute peak of perfection. The casks not selected, are simply not chosen because they have not yet reached their absolute best. They are left to quietly mature further in our warehouse. In certain cases these Vintage releases may demonstrate pure Balblair characteristics, whilst others may highlight the effects that a single cask can have on this character.”- Balblair

GIN MARE

Gin Mare is produced in a small fishing village on the Costa Dorada in Spain using botanicals all sourced within the Mediterranean area. Alongside ‘traditional’ botanicals juniper, bitter orange peel, seville orange peel, lemon peel, cardamon, and coriander seed there are four that are not quite so common; Arbequina olives, basil, rosemary and thyme. All the botanicals except the citrus are macerated individually for 24-36hrs in neutral grain alcohol, before being distilled in a copper pot still, again individually. The three citrus botanicals are macerated as fresh peels in neutral grain alcohol for a whopping 300 days before distillation. It’s not until all the botanicals have been distilled individually that they finally get to meet one another in the blending process.

The four ‘Mediterranean’ botanicals are evident immediately upon nosing this gin, with the rosemary in particular standing out. However, the juniper is still playing a starring role and is complemented rather than dominated by the other botanicals. There is a lightness created by the citrus and basil with a savoury olive undertone that brings back memories of hot holidays abroad. The savoury, herbal elements are immediately evident when tasting neat, with the rosemary again taking centre stage alongside the classic juniper backbone. There is no denying this is a gin, and even hardened gin purists will be happy to accept this product into the category. There is a good depth of flavour and a lingering olive and thyme finish that certainly gets the appetite going. Admittedly, there is a mild burn to this gin, but definitely not enough to put me off mixing with it
